This is another mushroom dish. You all know how I love my mushrooms :). I hope you will enjoy this one also.
6 Medium sized mushrooms, diced
6 Cherry or plum tomatoes, cut in quarters
2 Stalks Scallion / spring onions, diced
2 Spring Coriander/ cilantro, diced
1/2 Medium lime or 1 small lime juice
1 Small Tangerine juice
1 Tsp Dried herbs
1 Tsp Olive oil
1/2 Tsp Turmeric
1/2 Tsp Cayenne pepper
1/2 Tsp Sea salt
1. Combine mushroom, tomato, scallion, coriander in a bowl and toss together
2. Add olive oil, lime juice, dried herbs and toss together
3. Add juice of tangerine and toss together
Let stand on counter for an hour or refrigerate for longer period. You can use salad dressing if you prefer, but it’s not necessary. Use as a side or main meal.
