Saponins occur in many plant foods and get their name from their soap-like qualities. They are reported to have certain beneficial effects such as lowering of plasma cholesterol levels in humans, anticarcinogenic activity, inhibitory effect on infectivity of HIV in vitro, antioxidant activity and protective effect in respect to liver injury.
