Fried rice is one those very popular dishes that many people enjoy. It however is usually prepared with rice; and since rice is very starchy, you may want to try another alternative – quinoa. Quinoa can be used instead of rice in almost any fried rice recipe. This is a simple recipe you may want to try.
Ingredients:
1 cup cooked quinoa
1/2 cup sliced bell peppers
1/2 cup sliced mushrooms
1/2 cup sliced zucchini
1/4 onion, cubed
1 tablespoon grapeseed oil
1 stalked escallion, chopped
1 sprig thyme
Sea salt and cayenne pepper, to taste
Instructions:
- Heat oil in a pan, and sautée onion until browned.
- Add remaining vegetables and thyme and cook for another 5 minutes. Make sure they’re not too soft.
- Add the cup of boiled rice, and continue cooking until lightly browned.
- Decorate with chopped escallion.
