2 cups mixed vegetables
2 lettuce leaves or other greens
1 portion rice noodles
2 cups water
1/2 cube stock
1/2 tsp butter (optional)
Put cubes in pot, then pour in water and let boil for 1 minute
Put in vegetables let boil for 2 mins
Add noodles to the pot – break apart first or use as they are. It depends on how you like to eat them
Stir, cover and let boil for two minutes
Leave covered for another minute
Stir in butter
Note: Cooking times may vary depending on how you like your vegetables – some people like them well cook, judge accordingly.
You can also add other things to it. Most times I like simple meals. When I made this I figured I would share. This is a quick, easy, healthy option for people on the go or like myself who simply like light, easy meals – and it’s completely vegan. I use a dairy free, gluten free butter. Go light on the butter or just exclude it all together!
